About the role

Rockfish, a new leading seafood restaurant inBali, is seeking a talented and experienced Sushi Chef to join their dynamic culinary team. As a Sushi Chef, you will be responsible for creating exceptional sushi and sashimi dishes that showcase Rockfish’s commitment to quality and innovation. This full-time position offers the opportunity to work in a vibrant and collaborative environment, contributing to the overall success of the restaurant.

What you’ll be doing

1. Prepare and present a variety of sushi, sashimi and other Japanese-inspired dishes with precision and artistry

2. Ensure the highest standards of food quality, freshness and presentation

3. Collaborate with the culinary team to develop new menu items and refine existing recipes

4. Maintain a clean and organised workstation, adhering to all food safety and hygiene regulations

5. Provide excellent customer service, responding to guest inquiries and special requests

6. Mentor and train junior kitchen staff in sushi and Japanese culinary techniques

7. Assist with inventory management and ordering of necessary ingredients

What we’re looking for

1. Minimum 2 years of experience as a Sushi Chef in a high-quality restaurant or hospitality setting

2. Formal training in Japanese culinary arts or equivalent experience

3. Excellent knife skills and the ability to prepare sushi and sashimi with precision and speed

4. Strong understanding of traditional Japanese flavours, ingredients and cooking methods

5. Passion for delivering exceptional customer service and creating an enjoyable dining experience

6. Excellent time management, multi-tasking and problem-solving skills

7. Ability to work collaboratively in a fast-paced, high-pressure environment
