We are seeking a Purchasing Manager to lead procurement, inventory, and quality compliance for food, beverages, consumables, and equipment. This role manages vendor selection, contract negotiations, and sustainable sourcing while ensuring adherence to hygiene, safety, and local regulations. The Purchasing Manager will optimize costs, monitor supplier performance, and collaborate with all departments to maintain efficient, compliant, and eco-friendly procurement operations.

Key Responsibilities

Pre-opening Preparation

• Prepare procurement lists for FF&E, OS&E, linens, kitchen equipment, food & beverage items.

• Research, evaluate, and select suppliers for food, beverages, consumables, linens, and equipment.

• Negotiate vendor contracts and establish Service Level Agreements (SLAs).

• Set up initial inventory and logistics systems.

Operations Management

• Manage daily purchasing and inventory for food, beverages, consumables, and operating supplies.

• Oversee the full procurement cycle: purchase requests, orders, receiving, inspection, and usage.

• Analyze purchasing costs and implement cost-saving strategies.

• Evaluate supplier performance and address improvement needs.

• Secure backup vendors and manage urgent procurement needs.

Collaboration & Reporting

• Coordinate purchasing requests from F&B, Housekeeping, Engineering, General Affairs, and other departments.

• Provide regular purchasing reports and cost optimization updates to the General Manager and corporate headquarters.

• Ensure alignment with corporate purchasing guidelines and local operations.

Quality & Compliance

• Conduct regular inspections to ensure vendor compliance with hygiene and quality standards.

• Monitor food storage, handling, and distribution according to safety regulations.

• Ensure compliance with Indonesian local regulations and company standards.

• Incorporate eco-friendly and sustainable sourcing practices.

Requirements

• Minimum 5 years of purchasing experience in hotels, resorts, large-scale F&B operations, or supply chain management.

• Proven experience in vendor sourcing and contract negotiation.

• Strong knowledge of FF&E, OS&E, food & beverage, and linen procurement.

• Demonstrated success in cost control and process improvement.

• Excellent negotiation and communication skills in a multicultural environment.

• Proficiency in English (Bahasa Indonesia or Korean is a plus).

• Strong organizational skills and meticulous attention to detail.
